Carrot (1st week)

Pronounce it: ka-rot The carrot, with its distinctive bright orange colour, is one of the most versatile root vegetables around - a result of its sweet flavour, which means it can be used raw or cooked, in sweet or savoury dishes. Up to the Middle Ages, all carrots were purple - the orange variety was first developed in 16th-century Holland by patriotic growers who bred it in tribute to the king, William I of Orange. That old wive's tale about carrots helping you see in the dark isn't entirely off-target; they're very high in betacarotene, which is an important nutrient in maintaining healthy eyes. Availability All year round, but at their best mid May through to the end of September.   Choose the best Carrots should be firm, with unblemished, bright orange skins. In spring, look out for young, thin carrots with their feathery greens still attached - they're particularly tender and sweet. Those on sale later in the season will be larger and tougher....

1. Rolling Pin Function : Roll the dough into thick. Material : Wood and Plastic. How to clean : If made with wood don't clean it with water because it can broke the wood, just clean it with towel or napkin. If material is plastic you can clean with water and soap. 2. Scrapper Function : Scrap remaind of the dough, clean your table from sticky dough, cut the dough into portion size. Material : Stainless Steel. How to clean : wash with sponge and soap. 3. Piping Bag Function : for modeling or shaping. Material : Plastic. How to clean : Wash it inside and outside with soap and sponge. But the are piping bag just used for one time and throw away.

Daily Report 07/08

Puff Pastry product Today, in this 2 nd week  at Monday, 08.00 a.m we start again in our lovely kitchen laboratory. First as an opening Mrs. Tasya speech in front of the class, she talk using english. She shared their sad experience while selling onigiri (oniijang), and then we have some information from our lecture (Mr. Faisal) about our activities in this week. Today we make puff pastry again, tomorrow we have some guest from BDI (Badan Diklat Industri) again, so we prepared their ingredients, the main ingredient is Seaweed and  Wednesday another guest from Switzerland, 12 person will come to our kitchen and cooking with us. Last  in Thursday someone must to give presentation about raw material in our class with english (oh my gosh….but I thing this is for learning for good habit for us to be a professional Chef) and product the puff pastry.
